Update language to source-available products instead of "proprietary"

Ashton Herrmann requested to merge proprietary-to-source-available into master

@sytses has suggested that "Source-available" is a better descriptor for GitLab Enterprise Edition than "proprietary."

This MR (currently a WIP) will update our language on our marketing and other pages in the handbook accordingly.
