Renamed EditorLite to SourceEditor

What does this MR do?

Re-names all instances of EditorLite to Source Editor in the course of the editor's rebranding.

The MR also updates the documentation (preserving the paths to the existing images, however) and tests.

Screenshots (strongly suggested)

No visual changes should happen.
